Who doesn't love pizza? This is my healthy, gluten free version! Making the crust with a cauliflower - so delicious!!
Pre-heat your oven to 200℃ Cut and add your cauliflower to a food processor and blend until it looks like little grains of rice.
Once nice and fine, add to a dry fry pan and cook on a low heat until all moisture evaporates. (Do not over cook/burn) When you think all the moisture is gone, put it into a bowl and let it cool down.
Once cooled, add your egg and Parmesan Cheese. Mix first with a spatula and then with your hands. It should come together nicely. Place your mixture on a lined oven tray and shape into a pizza shape. (Make it nice and thin so it cooks right through).
Place into your 200℃ (390℉) pre-heated oven and cook for 12-16 minutes or until it's nice and golden brown. Once out of the oven, brush garlic infused olive oil over the top of the pizza. Then spread on your pizza/tomato sauce and top with your favorite pizza toppings. Finally season with salt and pepper and drizzle with a little bit of olive oil.
Cook in a 180℃ (350℉) oven for around 20 minutes. Then grill for a further 4-5 minutes. Cool it for a few minutes before slicing up and enjoying!
