Delicate Cookies & Cream Foam Dessert

Delicately sweet, foam-like and totally addicting, this dessert will blow your mind! It tastes a bit like the Milka Oreo chocolate, only in a bit healthier and less sweet version :) I am sure if you try it, you won't regret it.

You Will Need (13 things)
- 200 g Skyr (high protein yoghurt)
- 75 ml Aquafaba
- 60 ml Skimmed Milk
- 35 g erythritol (ground to powder)
- 2 Oreo Cookies
- 10 g Powdered Milk
- 6 g Gelatin

Ingredients for the glaze:
- Stand Mixer
- Bowl
- 17 g Milk Chocolate
- 8 g Skimmed Milk
- ½ tsp Vanilla Essence
Steps (5 steps, 35 minutes)

Whip the Aquafaba into a stiff foam (it's best if the mixer does it for you, because such whipping can take several minutes). Meanwhile, mix the Skyr, erythritol, powdered milk and vanilla essence until smooth.

Add the whipped aquafaba foam to the skyr mass and gently combine it.

Heat the milk and mix the gelatin with it until it is completely dissolved, then also add it to the skyr mass and mix it until a plain, slightly foamy consistency is obtained.

Finally, crush the cookies into tiny pieces and add them to the foamy mass. Stir and pour it into a bowl, in which cool the foam in the fridge for min. 3 hours.

To make the glaze, heat the milk and chocolate together, while stirring well to obtain a uniform consistency. I recommend that you heat both ingredients together in the microwave for about 20 seconds and mix them vigorously - it's ready in less than a minute. Then put the glaze on the foam and... enjoy!
