Date & Ginger Cake

A cake spices with ginger liqueur and topped with sweet dates

Laced with Kings Ginger Liqueur, this cake is topped with buttercream icing, ginger and chopped dates for a spicy and sweet treat.

You Will Need (15 things)

  • For the cake

  • 300 g Butter
  • 200 g Light Brown Sugar
  • 3 Eggs
  • 3 oz Kings Ginger Liqueur
  • 300 g Self-Raising Flour
  • 150 mm Soya Milk
  • 2 tsp Cinnamon
  • 2 tsp Ginger
  • 1 tsp Nutmeg
  • ½ tsp Salt
  • 8 - 10 chopped Dates
  • For the icing

  • 250 g Icing Sugar
  • 100 g Butter

Steps (9 steps, 45 minutes)

    Cream together the butter and brown sugar.

    Beat in the eggs, one at a time.

    Add the Kings Ginger liqueur.

  4. 4

    Add the flour and soya milk a little at a time and mix to combine.

    Stir in the spices, salt and dates. Keep a handful of dates to one side for topping your cake.

    Separate into two cake tins and bake at 180'C for 45 minutes until golden.

    When the cake has cooled, cream together the icing sugar and butter.

    Spread half the icing on one cake before sandwiching a second cake on top. Spread with the remaining icing.

    Top with the remaining dates and sprinkle with ginger before serving.
