Fritters
- 310 g Corn kernel
- 150 g Grated Zucchini
- 2 Lightly beaten Eggs
- 3/10 cup Milk
- 1 cup Self-Raising Flour
- ½ tsp Ground Cumin
- Salt and Pepper

Scrambled eggs
- 2 Eggs lightly beaten
- 2 tsp Pouring Cream

Garnish
- Avocado smash
- Rocket
- Cream Cheese
- Sweet Chilly Jam
- Pine Nuts , toasted
Steps (4 steps, 15 minutes)

Whisk together the corn, zucchini, eggs and milk. Gradually stir in the sifted flour and cumin, salt and pepper.

Heat a little oil in a non-stick frying pan over medium heat. Using a tablespoon, place heaped spoonfuls of the mixture in the pan and cook in batches. Using a spatula, turn them once, until golden and cooked through. Drain on paper towel, cover and keep warm as you cook remaining fritters.

Whisk two eggs add cream together and cook in frypan gently until scrambled eggs

Serve two corn and zucchini fritters with scrambled eggs, avocado, scoop of cream cheese, dribble sweet chilli jam and fresh rocket. Sprinkle with toasted pine nuts and cracked pepper.
