Inspired by the flavours of a D&T cocktail, this is no ordinary lemon drizzle cake. Combing lemon, lime and mint with an infusion of Daffy's Gin, this cake will please cocktail and cake lovers alike.
Inspired by the flavours of a D&T cocktail, this is no ordinary lemon drizzle cake. Combing lemon, lime and mint with an infusion of Daffy's Gin, this cake will please cocktail and cake lovers alike.
Place the self-raising flour, butter, caster sugar, eggs and baking powder in a bowl.
Mix with an electric whisker until combined.
Mix the Daffy's Gin into your batter.
We're going to be using the botanicals of the gin to flavour our cake. So finely chop two springs on mint and grate the zest of a lemon and a lime in to individual bowls.
Add half of the mint and zest from the lemon and lime to your batter. Squeeze in the juice from half of the lemon and lime and stir to combine.
Grease a loaf tin and scrape the batter in, smoothing out the top with a spatula.
Bake in a hot oven at 180 degrees C for 35 minutes until golden.
While the cake is still warm, make the icing by mixing together the icing sugar with the remaining mint and lemon & lime zest (saving a little for sprinkling).
Squeeze in the remaining juice from the lemon and lime and stir in the gin until the icing is smooth.
Spoon the icing onto the cake and let it drizzle around the edges.
Sprinkle the remaining zest on top and garnish with a few mint leaves.
