This recipe is really super quick and easy to make, when you feel like something sweet right now. All credit to a really great friend of mine, who taught me this recipe, and it has become a tradition of ours to make!
This recipe is really super quick and easy to make, when you feel like something sweet right now. All credit to a really great friend of mine, who taught me this recipe, and it has become a tradition of ours to make!
Grease the 2 coffee cups, or mugs, really well.
Sift together all the dry ingredients
Melt better for about 1 minute in the microwave oven and then add the milk and egg. Mix well and add to dry ingredients.
Spoon half of the syrup/jam into each cup. Allow to settle at the bottom. Spoon half of the mixture into each cup, be careful not to mix the syrup/jam with the batter.
Cover both cups loosely with plastic wrap, and microwave both cups at the same time for 2 minutes. [Note: the puddings will cook and rise over the brim of the cup. Don't worry, this is supposed to happen!]
Allow to cold and settle for a little in the microwave oven. Serve in the cup, with custard if you want to! Enjoy!
