Pickled Cucumbers with creme fraiche

You Will Need (8 things)
- 6 Slices of English Cucumber approx 1/4 to 1/2 inches thick cut on bias
- 1 tsp Minced Red Onion
- ¼ cup White Vinegar
- 3 tbsp Creme Fraiche *
- Equal parts Kosher salt & granulated White Sugar

*to make creme fraiche
- 3 Parts Heavy Cream
- 1 Part Buttermilk
Steps (2 steps, 10 minutes)

Toss cucumber slices in vinegar, season with salt & sugar mixture to taste
Place creme fraiche in boat
Top with onion
Prop cucumber slices against creme fraiche
sprinkle salt & sugar mixture over top of the entire dish (just a little extra love)

*to make creme fraiche
Mix together, cover, and store in a cool dry place (not refrigerator) for 48 hours. Strain over cheesecloth or coffee filters covered overnight in the refrigerator. Whip until stiff peaks form. Creme fraiche is ready to eat. Store in airtight container and consume within a week.
