This right here is my idea of heaven: a thin and sweet pastry filled with whipped topping and peaches. My mom would make theses for us as kids all the time, and it just may be my fondest childhood memory. I have since recreated her crepes many times and want to share the recipe. Joy's Crepes: 1 1/2 Cups Flour 1 tbsp Sugar 1/2 tsp baking powder 1/2 tsp salt 1/2 tsp vanilla 2 tbsp melted butter 2 cups milk 2 eggs

Beat until smooth. Lightly butter skilled over medium heat. Pour batter into skillet and immediately rotate pan until batter covers bottom. Cook until light brown, turn and brown on other side.
Serve with fruit, ice-cream, peanut butter, whipped topping, or whatever else your heart desires!
