Cranberry Chocolate Oat Cookies

You Will Need (9 things)
- 140 g Light Brown Sugar
- 125 g Unsalted Butter at room temperature
- 1 Eggs at room temperature
- 125 g Wholegrain Oats
- 75 g White Flour
- 125 g Milk Chocolate Chips
- 90 g Dried Cranberries
- plus extra Milk Chocolate Chips for topping pre-baking
- 2 tbsp White Flour in a bowl, for dusting pre-baking

Preheat the oven to 180C and line a baking tray with baking paper or a baking sheet.
In a large bowl, beat the butter and sugar on a low speed (using either a handheld electric beater or a stand mixer), scraping down the sides occasionally with a spatula, until light and creamy. Crack the egg into the mixture and beat until well-combined.
In a separate large bowl, combine the oats, flour, baking chips and cranberries and stir to combine. Spoon the creamed butter mixture into the bowl and fold to combine. -

To form the cookies, either use a tablespoon to scoop out the batter, or use your hands and just grab roughly a tablespoon worth of dough. Drop the cookie dough briefly in the bowl of extra flour to give it a light coating, and roll into a ball. Place on the baking tray and stud it with two to three extra chocolate baking chips, pressing down slightly into the dough as you do it. Repeat until the baking tray is full, leaving a space of about an inch around each cookie. I could comfortably fit 12 cookies on my baking tray, so I baked these in two batches.

Bake for roughly 12 minutes. Exact baking time will depend on your oven.
