These were made specifically to raise funds for the people effected by the Feb 22nd Earthquake

This recipe came to me from a Recipe Book put together by & for the St John Fellowship in Oamaru. Ellen Frisby contributed the recipe for the book & I have used this recipe several times.

Today I was baking so the cookies can be sold to raise funds for the Red Cross or Salvation Army to help the people of Canterbury who endured an Earthquake on Tuesday 22nd Feb 2011.
We know loads of people there & while the people I know are all ok, the destruction was massive & too many people died. Not to mention the aftershocks still continue, making the mental recovery even harder.

These cookies are going to be sold at my work tomorrow for donations - I have an awesome boss.

You Will Need (11 things)

  • 1 cup Sultanas
  • 1 cup Peanuts
  • 2 tsp Baking Powder
  • 1 cup Chocolate Chips
  • 1 cup Flour
  • 1 x Egg
  • 1 tsp Vanilla Essence
  • 1 cup Brown Sugar
  • 1 cup Caster Sugar
  • 125 g Butter
  • 3 tsp Cocoa

Steps (4 steps, 30 minutes)

    Cream butter, sugars & the vanilla.

    Mine are VERY orange as the only caster sugar I had was mixed with orange food colouring - I was going to make orange candy floss :S

    Beat in your egg

    (I did a double batch, hence the two eggs in the pic)

    Add dry ingredients & mix.

    Roll into balls (approx teaspoon of mixture) and flatten with a fork.

    Bake at 180deg Celsius for 15mins.
