Description

Cake 150g unsalted butter, softened 150g caster sugar 150g self raising flour 100g chocolate chips 3 medium eggs, room temperature 1 1/2tsp vanilla extract Icing 250g icing sugar 80g butter, softened 25ml milk 2-3 drops vanilla extract Blue food colouring Decoration 100g desiccated coconut Blue food colouring White chocolate buttons milk chocolate chips Cookies Makes 12

Instructions

  1. Pre-heat your oven to 190ºC/375ºF/Gas mark 5

  2. Place 12 baking cases in a muffin tin

  3. Put the butter and sugar in a large bowl and cream together until soft (the butter will get paler the more you whisk)

  4. Add the vanilla extract and whisk again

  5. Add one egg and whisk, and then the others 1 at a time!

  6. Then add the flour and whisk until nice and smooth

  7. Then fold in your chocolate chips

  8. Use 1-3 tbsp of batter for each cupcake, or use an ice cream scoop if you don't want any mess!

  9. Place the cupcakes in the oven and bake for 20-25 minutes until they are golden brown

  10. When baked, leave to cool on a wire rack

  11. Now for the icing! With an electric whisk, whisk the butter alone until pale and creamy

  12. Then add in the icing sugar bit by bit and whisk again till the mixture all comes together.

  13. Combine the milk and vanilla in a separate bowl and then add to butter tbsps at a time, then whisk

  14. Continue beating until light and fluffy and then start to add in your food colouring

  15. When you get the perfect cookie monster colour, leave to the side!

  16. Put your coconut into a bowl and add 5-6 drops of food colouring and mix really well with a spoon until all the coconut is blue

  17. With a spatula, spread the icing onto your cakes and make sure it is quite thick - 5mm

  18. Then roll the cake (icing side down) in the coconut until fully covered

  19. With a bit of icing, stick the chocolate button and chocolate chip together to make an eye!

  20. Put 2 eyes in the top of the head and place a part of cookie in its mouth!
