Easy to make. Tastes moist & coconuty. You can eat plain or top with icing. Tastes amazing when still a little warm from the oven.

You will need

1 cup Butter Coconut 1 1/2 cup Sugar 2 Eggs 2 Egg Whites 1 tsp Vanilla 2/3 cup Coconut 2 1/2 cup Plain Flour 2 1/2 tsp Baking Powder 1/2 tsp Salt 1 cup Coconut Milk

Instructions

1. 

   Heat oven 180 degrees. Cream butter & sugar together.

2. 

   Add eggs & vanilla. Mix through.

3. 

   Add flour, baking powder, salt & coconut. Gently fold through.

4. 

   Add coconut milk. Stir to combine.

5. 

   Pour into cases. Bake for 20 mins. Allow to cool.

6. 

   Ice the Muffins & top with coconut if you wish. Serve
