Moist cake with loads of coconut flavour
Heat oven 175 degrees. Cake... Whisk egg whites until stiff. Set aside.
In a bowl beat butter, oil & sugar.
Add vanilla, egg yolks & coconut. Stir to combine.
In a bowl combine the flour, baking powder & Bicarb.
Alternatively add the flour mixture & buttermilk to the butter mixture. Stir until just combined.
Fold in the egg whites.
Pour into tin. Top with 1 tbsp of sugar.
Bake for 30-40 mins until cooked through. Cool completely.
Frosting... Cream the butter & cream cheese together.
Add the vanilla & lemon juice. Mix through.
Slowly add the icing sugar.
Stir in the coconut.
Stack & cover the cake.
Sprinkle the top of the cake with coconut.
Cut & serve.
