You Will Need (20 things)

Cake
- 1/2 cup Butter
- 1 cup Oil
- 1 cup Sugar
- 5 Eggs
- 1 tbsp Vanilla
- 1 cup Coconut
- 2 cup Plain Flour
- 1 tsp Baking Powder
- 1 tsp Bicarbonate Of Soda
- 1 cup Buttermilk

Frosting
- 8 oz Cream Cheese
- 1/2 cup Butter
- 2 tsp Vanilla
- 6 cup Icing Sugar
- 2 cup Coconut
- 1/2 tsp Lemon Juice Optional

Topping
- 1/2 cup Coconut Optional
Steps (15 steps, 60 minutes)

Heat oven 175 degrees.
Cake...
Whisk egg whites until stiff.
Set aside.

In a bowl beat butter, oil & sugar.

Add vanilla, egg yolks & coconut.
Stir to combine.

In a bowl combine the flour, baking powder & Bicarb.

Alternatively add the flour mixture & buttermilk to the butter mixture.
Stir until just combined.

Fold in the egg whites.

Pour into tin.
Top with 1 tbsp of sugar.

Bake for 30-40 mins until cooked through.
Cool completely.

Frosting...
Cream the butter & cream cheese together.

Add the vanilla & lemon juice.
Mix through.

Slowly add the icing sugar.

Stir in the coconut.

Stack & cover the cake.

Sprinkle the top of the cake with coconut.

Cut & serve.
