Easy to make cookies. You could coat in chocolate if you like but the really don't need it.

You will need

1 cup Butter 1 1/2 cup Sugar 1 Egg 1 tsp Almond Extract 2 1/2 cup Plain Flour 3/4 tsp Baking Powder 1/2 cup Coconut

Instructions

1. 

   Heat oven 350/175 degrees. Cream together the butter & sugar.

2. 

   Add the egg & almond extract. Mix through.

3. 

   Add the flour & baking powder. Stir through.

4. 

   Stir in the coconut.

5. 

   Roll into balls (walnut size). Place on the tray. Flatten out a little.

6. 

   Bake for 8-10 mins until golden. Cool on the tray for 5 mins the move to a cooling rack.

7. 

   Serve.
