A simple recipe with tasty results. I've made cake mix cookies before - but these are my new favorites. I was skeptical about using the cake mix that has the pudding in it already, but I think that's what made them so unique. They are literally like eating a larger, softer, chewier version of coco puffs. Yay!

You Will Need (3 things)

  • ½ cup Softened Butter (aka one stick)
  • 1 Pkg Pillsbury Devil's Food Cake Mix With Pudding
  • 2 Egg(s)

Steps (5 steps, 30 minutes)

    Preheat your oven to 350.

    With electric mixer combine cake mix, softened butter, and eggs. It will look kind of dry and pasty, but it will hold itself together once you're scooping it out.

    Scoop dough onto cookies pans lined with parchment paper.

    Now I'm a little bit of a perfectionist, but I can't tell you how useful using an actually scoop (aka disher) is for making cookies. I picked one up a while back (I think at Target - but it may have been William Sonoma - yay gift cards!) Just for size reference it's smaller than an ice cream scoop, and probably holds 1-2 tablespoons (I'm not sure).

    Here's the why of scooping out cookies that are all the same size: they bake evenly. You don't have to worry about burning the smaller ones, and all-in-all they just have a nicer look to them. Nice rounded edges too. And this way, you don't have to get your hands dirty trying to roll perfectly little dough balls. Consider yourself soap-box'd.

    Bake for 8-12 minutes depending on your oven. Let them cool on the cookie sheet for at 5 minutes, and then finish on a cooling rack.

    Enjoy! I personally like to dunk mine in milk - it really completes the whole cereal/cookie idea!
