I wanted to make a naughty or nice macaron tree for our Christmas party, so I made white chocolate macarons for the good guests and coal ones with dark chocolate for the bad.
I wanted to make a naughty or nice macaron tree for our Christmas party, so I made white chocolate macarons for the good guests and coal ones with dark chocolate for the bad.
Whisk together the ground almonds, cocoa and charcoal in a bowl.
Tip the mixture into a blender and grind into a fine powder.
Tip into a sieve above the previous bowl.
Sieve back into the bowl, to get a super fine mixture.
Separate the eggs and whisk the egg whites until they form soft peaks. Add the caster sugar, a little at a time, and whisk until the eggs form stiff peaks.
Add half of the charcoal mixture then fold in.
Fold in the remaining charcoal mixture and then scoop into a piping bag.
Pipe out 24 circles onto baking paper of a macaron mat, bang against your counter to remove any air bubbles and then leave for 30 minutes to form a skin on top. Bake at 150'C for 12 minutes and leave to cool.
Fill with dark chocolate ganache, or any filling you like and serve to your Christmas party guests!
