I was bored of my usual banana bread and decided to venture out into the world of making up stuff. I pretty much guesstimated every amount of everything I did. I took my experience baking and then came up with this... They are a bit addictive... Like banana muffins smashing into an apple pie and their exploded guts are jumping like pop rocks in your mouth. Yep, that sums it up. :)

I took my experience baking and then came up with this... They are a bit addictive... Like banana muffins smashing into an apple pie and their exploded guts are jumping like pop rocks in your mouth. Yep, that sums it up. :)
Get out your ingredients: 2 cups flour (I used wholewheat) 1 1/4 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 teaspoon vanilla extract 1/3 - 1 cup pecans 1/4 cup firmly packed brown sugar 2 large bananas 1 medium apple 1/3 cup salt-free margarine 1 - 1 1/2 cups milk (I used 1 1/2 cups almond milk for this)
Preheat oven to 325.
In a bowl, mash the bananas.
In a separate bowl, mix together flour, baking soda, and baking powder.
Now mix in the brown sugar, pecans, and ground cinnamon. When you have that mixed, put it aside and go back to the bowl of mashed bananas.
With the bowl of mashed bananas, add in: vanilla extract, margarine, and milk. Don't worry about it not mixing together well.
On a small cutting board, peel and chop the apple into small pieces.
Add the apple pieces to the mixture of bananas.
Pour that into the flour mixture.
Mix it really well. Do not over-mix, it shouldn't be as watery as soup. Like pancake batter, it should be a little lumpy and have a bit of a texture.
When you scrape at the bottom of the bowl with a spoon and there isn't any flour then you're good. <- This is what the mixture should look like. (I usually taste it to see if it is missing anything, feel free to do so too, it's like how cookie dough tastes delicious, it's the same with this)
Get out your muffin tins, it's time to bake! (I ran out of the paper cup things you put them in... Pam works just as well.) :)
Get a big spoon or a small ice-cream scoop if you have one, and put a large scoopful of batter into each one.
It will now look like this. You will want them filled near the top(they don't rise very much). Make sure that they all have an even amount of batter in each cup so that they will all cook evenly.
Put in the oven for 20-30 minutes. (It took me 26 minutes when I made mine) To check if they are done, take a toothpick or a thin sharp knife and poke through the muffins. If the toothpick comes out clean, then you are done! If it comes out looking like there's batter on it, you either didn't mash the bananas well enough, or it needs a few more minutes of baking.
Take out of the oven and let sit for 10 minutes.
You can now take them out of the tray and enjoy! :)
