The key to oatmeal with the chewy texture is to start with whole oats. For the extra few minutes it takes to cook, forego the minute version.
Start by bringing the water with a pinch of salt to a boil. Add the oats and cook for five minutes, just until the flakes are soft and chewy. Use a slotted spoon, if it's too moist, to drain and add to a bowl. I like to add a tablespoon of brown sugar, top with the chocolate chips and raspberries and here's the secret . . . add some evaporated milk.
