This is a little different to the usual cakes & desserts I make. I fancied something a bit lighter. This is a nice light change. Could easily be made in advance. You could also use shop bought sponge to cut back on the preparation & effort.
This is a little different to the usual cakes & desserts I make. I fancied something a bit lighter. This is a nice light change. Could easily be made in advance. You could also use shop bought sponge to cut back on the preparation & effort.
Make the cake.... Cream butter & sugar together.
Add beaten eggs, one at a time. Add the vanilla.
Add the flour & baking powder. Mix until combined.
Bake for 30-40 mins. Gas 3 / 160. Once cooked remove from the oven & cool completely.
To make the mousse.... Break chocolate into bowl. Add 3/4 cup cream.
Heat in microwave for approx 1 1/2 mins until chocolate is melted. Stir to combine. Set aside to cool to room temperature.
Mix water & gelatine. Set aside until water if absorbed.
Once chocolate is cool & gelatine is absorbed place the gelatine in microwave for 15 secs.
Add gelatine to chocolate & mix.
Whip 1 cup of cream til just thickened.
Add 1/2 chocolate to cream & combine. Add remaining chocolate & combine.
Cut sponge in two. Place a piece in the bottom of tin.
Pour chocolate mousse on top of sponge. Refrigerate for at least 25 mins until set.
Place second piece of sponge on top of set mousse. Push down to attach to the mousse.
Make the topping... Microwave white chocolate & cream for 30 secs until melted. Stir to combine.
Allow to cool for 5 mins. Pour onto top layer of sponge & push to the edge.
Top of with chocolate curls or the like.
