This is quite time consuming to make but is definitely worth the effort. It is best made the day before and allowed to set up overnight. It will take approx 30 mins at room temp to defrost & soften so you can eat it.

Instructions

    Pre Heat oven 300/150/ gas 2. Put all dry ingredients in bowl & mix to combine.

    Add egg, buttermilk & oil to dry ingredients. Mix to combine.

    Add vanilla & water. Mix to combine.

    Pour into two tins & cook for approx 40 mins. Once cooked remove & cool completely.

    For cookie dough... Cream butter & sugar.

    Add flour & milk. Mix throughly. The dough will be thick.

    add chocolate chips & combine.

    Roll dough into small balls. Place in fridge to firm up.

    Once cake is cool & dough firm make the ice cream. Combine cream cheese, sugar, milk & vanilla. Mix to combine.

    Fold in whipping cream .

    Add chocolate chips & combine.

    Add 3/4 of the cookie dough balls. Stir to combine.

    Place 1st layer of cake into clean, lined tin. Add 1/2 ice cream mix on top.

    Add 2nd layer of cake on top of ice cream. Place remaining ice cream on top. Place in freezer for at least 6-8 hours or overnight.

    Remove from freezer approx 30 mins before serving.
