These are so simple to make and they look adorable. This recipe makes 3 logs which cut nicely into roughly 12 cookies and you can keep them in your freezer for a few months, slicing and baking whenever you need some fresh cookies... though they're unlikely to last that long!
These are so simple to make and they look adorable. This recipe makes 3 logs which cut nicely into roughly 12 cookies and you can keep them in your freezer for a few months, slicing and baking whenever you need some fresh cookies... though they're unlikely to last that long!
Whisk together the butter and sugar until light and fluffy.
Crack in the egg and whisk to combine.
Whisk together the flour with the salt and baking soda.
Whisk the flour into the dough.
Separate the dough into two bowls and mix in the cocoa, water and vanilla into the first batch.
Mix the peanut butter into the second batch of dough. Chill both balls of dough in the fridge for half an hour.
Separate each flavour of dough into three balls and roll out, onto a piece of parchment paper, to roughly the same size with a rolling pin.
Carefully place the chocolate dough on top of the peanut butter dough.
Starting at the bottom, carefully lift up the edge and roll into a log. Wrap in the parchment paper and pop in the freezer for an hour. Repeat to make two more logs.
Remove the cookie dough from the freezer just before baking and cut into slices.
Place on a baking sheet and bake for 15 minutes at 180'C.
