Instructions

    Brush the burgers with 2 tablespoons of the barbecue sauce. If you have time, leave them for an hour or so to absorb the flavour of the sauce. Heat the grill.

    Make the Chipotle mayo by simply mixing 1 tablespoonful of the Chipotle barbecue sauce with the mayonnaise (bottled mayonnaise is fine for this recipe)

    Make the salsa by mixing together the shallot, tomatoes, salt and lime juice. If you like fresh coriander, you can add some - I can't use it as my husband is allergic to it.

    Grill the burgers until done to your preference, brushing the remaining barbecue sauce over when they are half cooked. Slice the avocado and halve the rolls while they cook, and spread the rolls with some of the Chipotle mayo. Serve a burger on each roll (I've left mine open-topped so you can see the layers) topped with sliced avocado, salsa, grated cheese and spring onions.

    I used Smokey Chipotle BBQ Sauce from The Bay Tree. This is a classic BBQ sauce with a warm smokiness, not a fiery chilli hit, which makes it perfect for this recipe - you can cook your burgers indoors when the weather lets you down (doesn't it always?) and still get that smokey barbecue taste. It is absolutely perfect for making the quick and tasty Chipotle mayo - this recipe makes more than you will need for two people, but I defy you NOT to use up the rest as a tasty dip for chips or vegetables!
