Swirl a little bit of tahini here with a dollop of probiotic yoghurt. This is the ultimate naked spring time soup.

serves 4 as a starter

You Will Need (21 things)

  • Flesh of 2 large Avocado(s) , about 500g
  • 3 Garlic Cloves
  • 8 Spring Onions
  • 3 tbsp Mint Leaves
  • 3 tbsp Coriander Leaves
  • 400 ml Vegetable Stock (cooled)
  • 200 g Plain probiotic Yoghurt
  • Juice of 1 Lemon , to taste
  • Sea Salt and a good grinding of fresh black pepper
  • to serve:

  • Tahini dressing (see below)
  • Plain probiotic Yoghurt
  • Lemon Juice
  • TAHINI DRESSING

  • 2 tbsp Tahini
  • 2 tbsp Tamari
  • 2 tbsp Apple Cider Vinegar
  • finely grated zest and juice of 1 Orange(s)
  • ½ Garlic clove, finely chopped
  • 1 tsp Finely grated Fresh Ginger
  • 1 tbsp Toasted Sesame Oil

Steps (2 steps, 20 minutes)

    Place all the ingredients in a blender and blitz to a fine, smooth purée. Chill well. Ladle into bowls and add a swirl of tahini and yoghurt.

    TAHINI DRESSING

    Put the ingredients into a small jar, put a lid on and shake well to mix, then season to taste.
