This is a traditional recipe from Spain, for 4 or 6 persons. We called it "croquetas" and it could have different ingredients: chicken, ham, mushroom, egg, etc. This dish can be eaten warm or cold, no matter the moment, always have an delicious flavor.

First, we need to fry the chicken. Heat a frying pan with cooking oil and fry the chicken until it is well done. Normally we use the legs or chicken breasts. If we want a dish with fewer calories, we have to boil the chicken, without oil. The final flavor will be milder.
Now, when the chicken is at room temperature, we will remove the chicken bones, and we will split into small pieces with the help of kitchen scissors.
It's time to create the mix.In a skillet over medium heat add the chicken, with a tablespoon of olive oil, a little black pepper, salt and half a teaspoon of nutmeg. Mix it well and add 400 ml of milk. When it starts to boil, add flour to thicken the mix, 50 or 100 grams of wheat flour should be enough, but we can add more if necessary. We need a solid and homogeneous mixture.
Let cool the mixture and prepare two containers. A bowl of beaten egg, and another container with breadcrumbs.
When the mixture is cold, we wash our hands well and create balls about the size of the palm of our hand, neither too small nor too big. We put abundant cooking oil in a pan to heat.
Now comes the fun part. Soak the balls of the mixture into the beaten egg and then we cover it with the breadcrumbs. Then, we put them in the pan for frying.Be careful with the hot oil.
And we have our dish! We can decorate it with lettuce or sauce to accompany.
