These are a favorite of mine that I have made for brunch, lunch, or dinner. A creamy filling, loaded with chicken, mushrooms, onions, and peas. Spoon and wrap this mixture in Crepes and top with a cheesy Mornay sauce. Yum! "No one can eat just one".
These are a favorite of mine that I have made for brunch, lunch, or dinner. A creamy filling, loaded with chicken, mushrooms, onions, and peas. Spoon and wrap this mixture in Crepes and top with a cheesy Mornay sauce. Yum! "No one can eat just one".
Preheat oven to 400 degrees. Melt butter in a large skillet. Add onions and mushrooms and saute until tender.
Add flour and stir into butter and vegetables.
Add half and half, and stir to blend evenly. Add chicken broth. stir and blend evenly.
Allow mixture to simmer and thicken.
Add cubed chicken and Parmesan cheese.
Add Peas, Rosemary, salt and pepper. Stir all together well.
Spoon into Crepes. Roll up Crepes and place into a buttered casserole pan.
Make Mornay Cheese Sauce As follows: 1. Melt butter, and whisk in flour. 2. Slowly add milk and half and half, mixing constantly with your whisk. 3. The sauce will bubble and thicken as you add the milk. Now add the cheese and continue stirring. 4. Pour over crepes. 5 Sprinkle with Crepes with sliced green onions.
Bake approximately 30 minutes or until bubbly and slightly brown on top. Serve 6 (2 each) Enjoy!
