This is a light cheesecake. It is set with gelatine to stabilise it.
This is a light cheesecake. It is set with gelatine to stabilise it.
Crumb the biscuits. Melt the butter.
Combine the butter & biscuits.
Press biscuits into a tin.
Heat the cherry juice.
Add the sugar & gelatine to the hot cherry juice. Stir to combine. Allow to cool a little.
Beat the cream cheese to soften.
Add the juice to the cheese a little at a time. Beat well with every addition.
Pour cheese mixture on top of biscuits & refrigerate for 5 hrs or best overnight.
Cut & serve.
