Fruity and floral, this loaf is infused with Rock Rose Gin for a sweet treat which will win hearts faster than a bouquet of roses.

You Will Need (13 things)

  • For the cake

  • 200 g Butter
  • 200 g Self-Raising Flour
  • 200 g Caster Sugar
  • 4 Eggs
  • 1 tbsp Rosewater
  • Handful of chopped cherries Cherries
  • For the icing

  • 100 g Caster Sugar
  • 4 tbsp Rock Rose Gin
  • 2 tbsp Rock Rose Gin
  • 1 tbsp Crushed Edible Rose Petals
  • Handful of Cherries

Steps (10 steps, 45 minutes)

    Rub together the butter, self raising flour and sugar into a crumb.

    Whisk in the eggs.

    Add the gin, rosewater and chopped cherries.

    Scrape into a greased baking tin.

    Bake in a hot oven at 180'C for 40 minutes until golden.

    Place the sugar and crushed rose petals in a bowl.

    Add the rosewater and a splash or two of gin.

    Stir together until you have a thick runny icing that's not too watery.

    Spread the icing on top of the cake.

    Top with a few cherries and serve.
