Cauliflower Mash

A delicious low-carb alternative to mashed potatoes.

My mother has been recently trying a lot of varieties of foods and diets that I would normally shy away from (seriously, don’t get me started on the “paleo” diet), but she really inspired me to use up some of the excess veg I got in my bountiful basket in new and inventive ways. I also have a cousin that’s constantly looking for alternatives for some of her carb-heavy favorites, such as mashed potatoes. Also, if you’re looking for a way to sneak heaps of vegetable servings into your kids diets without them protesting then this is the way to go.

You Will Need (5 things)

  • 1 Cauliflower
  • Salt
  • Pepper
  • 1 tbsp Olive Oil
  • ¼ cup Water reserved from the liquid

Steps (2 steps, 10 minutes)

    Cut your head of lettuce into florets, then add them to a pot of salted boiling water and allow to cook for 10 minutes. If they’re not quite turning translucent by then give them a few more minutes.

    Then add your cauliflower and your oil to the bowl of a food processor and pulse. Add your water in tablespoons until all gone and the cauliflower reaches the consistency you were looking for. You might have to stir it with a spoon occasionally. Once you’ve reached the right consistency season to taste with salt and pepper and serve.
