This is a tasty version of carrot cake.
You can add nuts or fruit to this mixture.
This cake tastes better the next day.

You Will Need (15 things)
- 2 cup Plain Flour
- 1 3/4 tsp Baking Powder
- 1 tsp Bicarbonate Of Soda
- 1/2 tsp Salt
- 1 1/2 tsp Cinnamon
- 1/2 tsp Ginger
- 1/4 tsp Nutmeg
- 1/2 tsp Mixed Spice
- 1 cup Oil
- 1/2 cup Sugar
- 1 1/4 cup Brown Sugar
- 4 Eggs
- 1 tsp Vanilla
- 3 cup Carrot Grated
- Cream Cheese Frosting
Steps (7 steps, 60 minutes)

Heat oven 350 degrees.
Mix together the flour, baking powder, Bicarb, salt, cinnamon, ginger, nutmeg & mixed spice.

Mix together oil, eggs & vanilla.

Mix together the flour mix & the egg mix.

Add the carrot & fold through.

Pour into a tin.
Bake for 45-50 mins until cooked through.
Allow to cool completely.

Cut the cake & fill with frosting.
Top with the remaining part of the cake.

Sprinkle with icing sugar.
Cut & serve
