This is a delicious, moist carrot cake.

The recipe makes two 9 inch sponges.

I use butter icing to stack & top the cakes but they taste good without.

You Will Need (8 things)

  • 450ml Oil
  • 5 Eggs
  • 525g Carrot(s) Grated
  • 400g Plain Flour
  • 2 tsp Bicarbonate Of Soda
  • 300g Brown Sugar
  • 250g Sugar
  • 2 1/2 tsp Cinnamon

Steps (7 steps, 90 minutes)

    Heat oven 160/ gas 3.

    Mix all dry ingredients together.

    Mix all wet ingredients together.

  3. 3

    Mix wet & dry ingredients together.

  4. 4

    Pour into tins & bake for 1 hr 15 mins.

    Allow to cool in tin.

    Remove from tin & cool completely.

    Sandwich together with butter cream icing or leave plain.

  7. 7

    Serve.
