At first I was going to make popcorn balls for my sister since she loves popcorn balls but then I was like, "I want something sweet" so then I decided on Carmel-esque popcorn, which turned out delicious. I just kept eating, there is barely any for her left!

You Will Need (8 things)

  • 1 cup Brown Sugar
  • 1 cup White Sugar
  • 3 tbsp Butter
  • 1 Vanilla Extract
  • 1 cup Corn Syrup
  • 1 pinch Salt
  • Cinnamon
  • Microwave Popcorn you only need half the bag

Steps (5 steps, 45 minutes)

    OK, so first. Get out a cookie sheet and either spray it with cooking spray or put wax paper over it. I picked wax paper since I didn't want it uber greasy. But then, I tried to peel sticky popcorn off of wax paper, and it didn't go completely well, I will use spray next time. If you used wax paper, clip it down to the pan. Get out all the supplies and measuring cups you need. I also suggest getting two rubber spatulas ready, this all goes pretty quick.

    Get out a big bowl. Put the white sugar in and then the brown sugar and mix it together.. Add a pinch of salt if you like. Not very much at all. I also added my vanilla then. Get it all nice and mixed. Then you are ready to add corn syrup. I did add a itty-bit more after 1/4 cup, maybe a tablespoon. Mix that in too. It will generally be a sticky clump. It is a good thing. Pop your popcorn and spread it out on your cookie sheet. You only need a half of a bag though. Also get all the kernels out that you can.

    Put your sugar/syrup mix into a small pan, add the butter now. Turn on to fairly low heat. Mix and stir a lot, until your butter is starting to melt with the sugar. Once they are together keep stirring until you have a nice sugar paste. You will start to smell caramel soon. You can turn it up a little bit to make the sugar grains melt faster.

    When your grains are all melted and dissolved keep stirring until you are absolutely sure to put it onto your popcorn. You might want another person to mix as you pour, or vise versa. Have your popcorn pretty close to the rest of your popcorn but not touching. Pour the carmel over the popcorn slowly and stir as you go the evenly distribute the Carmel. Once you have it over the popcorn, let it set until it cools. You can have a taste test now if you need to. How can you resist? If you are making popcorn balls though, now it the time to form clumps.

    Once it is cool you should brake it up into bit sized pieces and put into a storage container. It should stay for around a week. It will also be a bit chewy once it is cooled, but in my book it just makes it better :)
