These are petite individual cannoli cups.
They are easy to make but you can't fill them in advance as they will go soggy.
It only takes a few mins to fill before serving.

You Will Need (19 things)
- 2 cups Plain Flour
- 2 1/2 tbsp Granulated Sugar
- 1 tsp Cocoa
- 1/2 tsp Cinnamon
- Pinch Nutmeg
- 1/2 tsp Salt
- 1/4 cup Butter Melted
- 1 large Egg
- 6-8 tbsp Apple Juice
- 2 tbsp White Wine Vinegar

Filling
- 12 oz Ricotta Cheese
- 8 oz Mascarpone Cheese
- 1/2 cup Icing Sugar
- 1/3 cup Chocolate Chips

Toppings
- Nuts
- Chocolate
- Sprinkles
Steps (13 steps, 120 minutes)

Cups...
Add flour, sugar, cocoa, nutmeg, cinnamon & salt, combine

Pour in melted butter.
Combine.

Add egg white. Combine.

In a bowl combine juice & vinegar.
Pour into other ingredients & combine.

Split dough in two, wrap & refrigerate for 30 mins to 1 hr.

Pre Heat oven 400 degrees.
Filling...
Blend ricotta & mascarpone together. -

Fold in icing sugar.
Chill for at least 30 mins.

Roll out dough. Cut into 2 1/2" circles.

Press into tray.

Bake for 11-13 mins until crisp & brown.

Cool on rack.
Dip edge of cup into chocolate & toppings.

Remove filling from fridge.
Place into piping bag & pipe into cups.

Sprinkle with chocolate chips & dust with icing sugar.
Serve within two hours of filling.
