Breakfast "Molletes"

You Will Need (8 things)

  • 1 bolillo cut in half
  • ¼ cup diced Onion
  • ½ cup of diced Tomatoes
  • ¼ cup chopped Cilantro
  • 1 tbsp Butter
  • 1 cup refried Beans
  • Manchego or string Cheese
  • Serrano Chili Pepper

Steps (3 steps, 20 minutes)

    Slice the "bolillo" or bread in half.

    It works best with a day old bread.

    On a pan, melt the butter and place the bread white side down to let it soak and to soften the bread, turn over.

    Spread a coat of refried beans and then add the cheese on top (any cheese that melts will work).

    Bake it in the oven until the cheese melts. (Instead of the oven use the microwave for a quick fix or let cook on the pan at low heat with the lid on)

    Add "pico de gallo" sauce on top and enjoy!

    To make the sauce, mix the tomatoes, onion, cilantro and serrano chili pepper. Add salt to taste.
