Breakfast For Dinner Spaghetti

This Breakfast-For-Dinner Spaghetti has it all with al dente pasta, crisp bacon, plenty of veggies and a runny egg that ties the whole meal together.

This dish is such a fun twist on dinner time! Add lean bacon to high fiber spaghetti, veggies and marinara sauce and top it all with a runny egg and you have a creamy, decadent tasting, single serving dinner that is surprisingly easy to make and health conscious!

You Will Need (12 things)

  • 2 oz High fiber Spaghetti (I use Dreamfields)
  • 1 clove Garlic (minced)
  • ¼ cup chopped Onion
  • 1 cup Baby Spinach
  • ¼ cup Marinara Sauce (I use Victoria's)
  • Fat free Half And Half or cream
  • 1 tbsp Parmesan Cheese
  • Salt to taste
  • Pepper to taste
  • Crushed Red Pepper to taste
  • 1 slice center cut Bacon
  • 1 Egg

Steps (8 steps, 25 minutes)

    Cook spaghetti according to package directions for al dente then drain and rinse with cold water

    Spray a small skillet with cooking spray. Add garlic and onion and cook over medium heat for 2-3 minutes

    Add spinach to skillet and continue to cook until it wilts, another 2-3 minutes

    Pour cooked pasta, marinara and cream into the skillet. Stir to combine

    Season with parmesan, salt, pepper and crushed red pepper to taste and continue to heat until sauce is warmed

    Remove pasta mixture to a serving dish. In the same small skillet, cook bacon over medium heat until crisp. Set cooked bacon aside but do not discard grease

    Cook egg over medium-low heat in the skillet, leaving the yolk runny. This is important because it will become a part of your pasta’s sauce

    Crumble cooked bacon over prepared pasta and top with egg. Break yolk so that it mixes in with prepared pasta
