Bread And Butter Pudding

  • 2 tsp Ground Cinnamon
  • 2 tbsp Brown Sugar
  • 4 tbsp Whiskey
  • 4 oz Caster Sugar
  • 4 Egg(s)
  • 10 oz Sultanas
  • Butter
  • 1 ½ pt Milk
  • Rind Of 2 Lemons

Steps (4 steps, 90 minutes)

    Heat the milk in a pan with grated lemon rind and bring to the boil. Turn the heat off and allow to infuse for 20 minutes

    Place 3/4 of the sultanas on the base of a large oven dish. Butter the bread slices on either sides, including the crusts and cut in half into triangles. Arrange bread on top of the sultanas. Sprinkle on the remaining fruit

    Beat the eggs then mix in the caster sugar, whiskey and flavoured milk. Pour the custard over the bread and soak for 5 minutes. Gently push the bread down into the custard and then dust with brown sugar and cinnamon

    Bake at 180 C or gas mark 4 for 40 minutes. Cover with foil and return to the over for a further 15 minutes until the custard is firm
