First, zest the lemon. Use a sharp potato peeler and start at one end, winding down to the other end in a spiral fashion.
Take your zested lemon and cut it in half. Save one half for its juice (see below) and use the other half of the lemon to wet the rim of a small wine glass, Once moistened, ‘crust’ the rim by dipping it in a saucer of fine sugar, making every effort to avoid getting it on the inside of the glass.
Put all the liquid ingredients in a mixing beaker, add 5 ml of the lemon juice and stir with cubed ice for 40 seconds. Strain into the prepared glass and spiral the lemon zest up the inside.
