Low fat recipe
This is a low fat recipe I enjoy during the week it's quick and easy to make which is great for low fat meals, a meal you could whip up during the week

  • Step 1

    Heat oil in a deep frypan over medium heat. In 2 batches ( otherwise it starts stewing rather then browning), add chicken and brown all over for 3-4 minutes. Remove from the pan.

  • Step 2

    add onion, celery stalk, mushroom, garlic and thyme, then season. Cook for 5 minutes, or until vegetables soften. Return chicken to pan with stock, bring to the boil, then cover and simmer over low heat for 10 minutes or until chicken is cooked.

  • Step 3

    Stir in spinach, celery leaves and lentils, then cook for 3-4 minutes until spinach is wilted and lentils are warmed through.

    I serve it with fresh crusty bread :)
