Borsch Cupcakes
Chocolate & beetroot cupcakes topped with a white chocolate & vodka ganache!

Tom loves to watch the F1 so I always try to bake him something inspired by the country that each race is held in. This week it was Russian, so I made some borsch inspired cupcakes.

You Will Need (20 things)

Chocolate & Beetroot Cupcakes
- 3 Small Beetroots
- 130 g Flour
- 130 g Sugar
- 65 g Cocoa
- 65 g Dark chocolate Fudge sauce
- 1 tsp Baking Powder
- 2 Eggs
- 130 ml Vegetable Oil
- 1 tsp Vanilla
- 12 Cupcake Cases

White Chocolate & Vodka Ganache
- 100 g Butter
- 250 g Icing Sugar
- 150 g White Chocolate
- 2 tbsp Vodka
- Red Food Colouring
- Piping Bag
- Fuse Tool or bag Sealer
- Star Sprinkles
Steps (16 steps, 45 minutes)

Whisk together the flour, baking powder, sugar and cocoa in a mixing bowl.

Blitz together the beetroots, eggs, oil and vanilla in a blender until smooth.

Mix the beetroot mixture into the flour and mix in the dark chocolate fudge sauce.

Line a cupcake tray with cupcake cases and fill each case with batter.

Bake at 180'C for 20 minutes.

Leave the cupcakes to cool.

To make the icing, whisk together the butter and icing sugar until combined.

Melt the white chocolate and mix in the vodka.

Whisk the melted chocolate into the icing sugar.

Use a fuse tool or bag sealer to fuse a line down the middle of a piping bag.

Fill one side of the piping bag with half of the ganache.

Add a few drops of red food colouring to the other half of the ganache.

Fill the other side of the piping bag with red ganache.

Trim the bottom of the bag with a pair of scissors.

Pipe a blob of ganache on to the top of each cupcake.

Sprinkle with star sprinkles and serve.
