I first heard about black bean burgers from a friend on Facebook. I came across a recipe in the book Get Cooking by Mollie Katzen. She is the author of the Moosewood Cookwood. I modified the recipe in the book.

Drain the black beans well and rinse. Place in a round dish and mash using a potato masher. Set aside
Chop the onion and bell pepper well. Saute together in about 1/2 tablespoon of the canola oil.
After cooking for a couple minutes more or less add the minced garlic. Cook for a few seconds and then add the cumin powder and the black pepper. Set aside
Add the onion mix to the bean mix. Mix well.
Add the lightly beaten egg and the bread crumbs. Season with salt. Shape beans into patties and fry in a small amount of olive oil. You will need to add more oil as you cook the rest of the patties. Brown patties for at least 3 minutes on each side.
2 cans of beans will yield 7 black bean burgers. For a delicious light meal, accompany these burgers with a tossed salad.
