This smoothie picked me up and helped me during a time when I was sick and had difficulty swallowing medication. I hope it puts a smile on your face too. The key to making this smoothie is the cottage cheese. I know what you’re thinking, “Cottage cheese? What!” (My mom questioned it too.) Cottage cheese is a thickener to a smoothie recipe. If you don’t like the cottage-cheesy taste, you can add flavor extracts to it, such as vanilla. You can also thicken your smoothie with xanthan gum. You might find that in the gluten-free isle.

Blend the cottage cheese using “pulse” until it is creamy.
Add the yogurt and ice and continue to “pulse” until the ice is blended in.
Add the fruit and/or fruit preserves and “pulse” until those are blended.
Add the milk and honey and blend a little more.
Blend in more ice if needed.
