- 100 g Ribeye Steak

Sauce
- 1 tbsp Soy Sauce
- 2 tbsp Citrus Yuzu Juice
- 3 tbsp Konbu Dashi Stock
- 1 tbsp Japanese Rice Vinegar
- Citrus Zest of Yuzu citrus

Sear the beef on a hot pan
Slice the beef in Carpaccio
Place the carpaccio on a bed of lettuce
Pour over the sauce and garnish with lime and lemon
