Happy Pancake Day! Here is my banana twist on the old shrove Tuesday classic!
Peel and mash your ripe bananas, then mix all the ingredients into a mixer - slowly mix together.
Depending on preference - you can leave some small lumps of banana or blend til smooth.
Choose your oil - I opted for coconut oil. This is in solid form so needs to be melted fully in the pan before you add the pancake batter.
Heat some oil in a non-stick frying pan on a medium heat.
Add some of the pancake batter to the pan, swirl around to make a bigger pancake - or alternatively have thicker smaller pancakes.
Flip the pancake over to cook on the other side - This is a slightly heavier batter than normal due to the banana so be careful if you flip in the air.
Once both sides are cooked - they are ready to add your chosen topping!
I opted for golden syrup - yes I was craving uber sweet!
These are ideal for a dessert, snack or even breakfast! Just be warned...they are delicious!
