Here is my banana cupcake recipe with peanut butter buttercream.

You Will Need (13 things)

  • 4 Bananas , mashed
  • 1 cup White Sugar
  • 2 Eggs
  • ¾ cup Vegetable Oil
  • 2 cup All Purpose Flour
  • 2 tsp Baking Soda
  • 3 tbsp Buttermilk
  • 1 cup Chopped Pecans
  • Frosting:

  • 3 cup Confectioners Sugar
  • 2 Sticks softened Butter
  • 1 cup Smooth Peanut Butter
  • Milk as needed

Steps (6 steps, 45 minutes)

    Beat or mash bananas with hands in a mixing bowl.

    Lightly beat bananas and white sugar together in a bowl until smooth

    Add eggs, one at a time, until incorporated.
    Beat in vegetable oil until well blended, 1 to 2 minutes.
    In separate bowl combine flour and baking soda.
    Slowly add flour mixture to sugar mixture.
    Add buttermilk; mix well.
    Fold in pecans (optional)
    Pour batter into the prepared muffin cups.

    Bake in the preheated oven until a toothpick inserted in the center of a cupcake comes out clean, 15- 20 minutes depending on your oven; check intermittently.

    Buttercream:
    Beat 2 sticks softened butter and 1 cup peanut butter until smooth.
    Add powdered sugar one cup at a time, mixing on low.
    Add milk one tablespoon at a time until desired stiff or fluffy consistency.

    Garnish with banana slice if desired
