You Will Need (17 things)

  • Base

  • Shortcrust Pastry
  • Filling

  • 4 Bananas Sliced
  • 420 ml Milk
  • 120 ml Heavy Cream
  • 100 g Sugar
  • Pinch Salt
  • 4 Egg Yolks
  • 30 g Corn Flour
  • 2 tsp Vanilla
  • 28 g Butter Room temp
  • Sprinkle Cinnamon Optional
  • Topping

  • 240 ml Heavy Cream
  • 15 g Icing Sugar
  • 1/2 tsp Vanilla

Steps (11 steps, 45 minutes)

    Heat oven 190/375 degrees.

    Line a dish with pastry.

    Bake blind for 20 mins, remove beans & bake for a further 5 mins.

    Allow to cool completely.

    Filling...

    In a pan heat together milk, cream, sugar & salt until sugar has dissolved.

    In a bowl mix together egg & corn flour.

    Slowly add 1 cup of the warm milk to the eggs, stirring constantly.

    Slowly add the egg mixture to the remaining milk.

    Continue to stir until mixture is thick.

    Remove from the heat & cover with cling film for 15 mins.

    Stir in butter & vanilla.

    Place 2 sliced banana on the base of the pie.

    Sprinkle with cinnamon if using.

    Top with filling.

    Cover with cling film & refrigerate for at least 4 hrs.

    Whisk together cream, sugar & vanilla until thickened.

    Top pie with remaining banana.

    Decorate with cream & chocolate

    Serve.
