My first attempt at making muffins.
Suprisingly easy and turned out great, give them a go!

Great recipe for using up those over ripe bananas.

Cooking time does not include cooling time.

You Will Need (11 things)

  • 50 g chop Milk Chocolate or 2 oz
  • 75 g Margarine or 3oz
  • 50 ml Milk or 2 fl oz
  • Muffin Baking Tin
  • small Pan
  • 12 Muffin Baking Case(s)
  • 275 g Self-Raising Flour or 10 oz
  • 1 tsp Baking Soda / Bicarbonate Of Soda
  • 3 Banana(s) large
  • 125 g Caster Sugar or 4 oz
  • 1 Egg(s)

Steps (8 steps, 35 minutes)

  1. 1

Turn oven onto Gas mark 4, 180 deg c or 160 deg fan oven.

    Place muffin cases into tin.

  2. 2

Place marg into pan and melt, once melted take off the heat and leave to cool.

  3. 3

While marg is cooling, sift the flour, bicarbonate of soda together in a bowl.

  4. 4

In another bowl mash the bananas with a fork then add the caster sugar, egg, milk and the melted marg.

    Mix well.

  5. 5

Add the banana mixture to the bowl with the flour and the chocolate.

GENTLY stir using as little stiring as possible - just enough for the flour to be combined.

    Mixture will be LUMPY.

  6. 6

Spoon mixture into case, half fill each.

Bake in the oven for 20 minutes or until they are golden and nicely risen.

  7. 7

Place on a wire rack to cool.

    Eat warm or cold.

Great for breakfast on the go or for the lunch box.
