In a large skillet over medium-high heat, warm the coconut oil. Add the onion and cook for 3 minutes, or until the onion begins to soften.
Stir in the curry powder and cook for another few minutes, until well incorporated.
Add the bok choy and cook until wilted, about 5 minutes.
Add the fish sauce, coconut aminos, and coconut milk. Cook for just a few more minutes, then garnish with the cilantro and serve.
