You Will Need (9 things)

  • 400 g Aubergines
  • 1 tsp Fresh Ginger
  • 5 cloves Garlic Chopped
  • 1/4 tsp Salt
  • 1 tsp Corn Flour + more for coating
  • 1 1/2 tbsp Soya Sauce
  • 2 tsp Sugar
  • 2 1/2 tbsp Oil
  • 1/4 tsp Pepper

Steps (8 steps, 30 minutes)

    Fill a bowl with one tsp of salt & cold water.

    Place aubergine in water & weigh down for 15 mins.

    Drain & pat dry.

    Mix soya sauce & corn flour.

    Coat aubergine with extra cornflour

  4. 4

    Fry the aubergine in a little oil for 8-10 mins.

    Remove to a dish.

    Fry the garlic & ginger in oil.

  6. 6

    Return the aubergine to the pan.

  7. 7

    Add the soya sauce, salt & pepper & stir to coat.

  8. 8

    Serve.
