Asparagus With Crispy Crumbs

This is a super simple and quick side dish. The anchovies give it a salty kick but you could always lessen the amount you use. I love asparagus but it is an acquired taste. Why not give it a try?

You Will Need (6 things)

  • 160 Flat Leaf Parsley
  • 1 cup Fresh Breadcrumbs
  • 1 Clove of Garlic Crushed
  • 45 g Can Anchovies Drained, chopped
  • 1 tbsp Olive Oil
  • 2 Bunches of Asparagus

Steps (3 steps, 10 minutes)

    Heat oil in a frying pan over medium heat. Add anchovies and cook, stirring and mashing with a wooden spoon, until anchovies are dissolved. Add garlic and cook for a further 30 seconds, stirring constantly.

    Add breadcrumbs and cook, stirring occasionally, for 5 minutes or until golden and crisp. Season with pepper.

    Meanwhile, steam, microwave , grill, or boil asparagus until just tender. Arrange on serving plates. Stir parsley into crumb mixture and sprinkle over asparagus. Serve.
