The region I live in Switzerland (North-East) is also called « apple juice-India », because we’re famous for our apples and products with apples. That’s why I decided for this recipe. It’s easy to make and so yummy ! It’s perfectly refreshing on hot summer days and if you add a pinch of cinnamon, it tastes like Christmas would taste (if you could eat it ;-))! It takes you only 10 minutes to make (without the cooling time!)!

Stir together apple juice, cornstarch, eggs, sugar, lemon juice and peel.
Whisk it in a saucepan on medium heat until it’s boiling and thickening.
Remove from heat and stir for 2 more minutes.
Pass through a sieve.
Let it cool for 1-2 hours.
Stir in gently the whipped cream.
Serve and enjoy!
